The easiest and quickest noodle recipe everrrr. These cucumber noodles are the perfect lil appetiser or side dish. Even just the perfect snack if you’re feeling peckish but want something super refreshing!
Heavily inspired by Chinese smashed cucumber salad!
You can also add garlic, ginger and basically anything else you want but this was just what I was vibing today hehe and it’s incred like this.

Step 1
Use a vegetable slicer to slice your cucumber into noodles, avoid using the centre of the cucumber as it’s a little too watery
Step 2
Add sugar, tamari, chilli oil and lime to your noodles and toss
Step 3
Serve instantly with the spring onion, extra chilli oil and sesame on top and enjoy 🥰
