Late Night Pasta

This pasta is one of my favourite late night dishes. It comes together in no time at all, and satisfies the hunger after a long day. Savoury, spicy Korean Gochujang is melted into a pan with an almost indulgent amount of butter, garlic and chili flakes are added, and a touch of honey balances it out. You’ll be pleasantly surprised. Just please use a long pasta for this. Short pasta just doesn’t taste right with this sauce.

Step 1
Begin by melting your butter on medium low heat. Bring your pot of pasta to a rolling boil, and salt well. Add the pasta, and stir. In the pan with butter, add the garlic, gochujang, chili flakes, honey, and vinegar. Melt it down all together until it becomes smooth. It will look like a broken, oily sauce until you add the pasta water. Lower the heat to low. When your pasta is about 3 min away from being al dente, scoop out about 1/2 cup of the starchy pasta water. Slowly add enough to the sauce, stirring to create a very silky smooth sauce. Be careful not to add too much. It shouldn’t be very thin. Add the pasta to the sauce, toss to coat. If it’s a little dry, go ahead and add a bit more pasta water to make the sauce creamy and easier to combine with the pasta. Serve immediately and enjoy.
