Kimchi Bacon Carbonara

A spicy spin on the classic carbonara! You can use whatever pasta/noodles you like for this recipe. I used udon noodles but this works great with fettuccine too!

Instructions

Step 1
In a bowl, combine the egg yolk, parmesan cheese and heavy cream. Set this aside.

Step 2
Boil your udon noodles according to package. Drain the udon noodles and reserve 2 tbsp of the boiling water.

Slice your bacon into bite sized pieces.

In a pan over medium low heat, cook your sliced bacon until crispy.
Step 5
Remove the bacon from the pan but leave the remaining bacon fat.
Step 6
Add your sliced onions and sauté for 2 mins.

Add the garlic and sauté for 30 seconds.

Add the chopped kimchi with its juices. Sauté for 5-6 minutes.
Step 9
Add in one package of your cooked udon noodles.
Step 10
Toss until well combined.
Step 11
Take the pan off of the heat.
Step 12
Add the cheese mixture with 2 tbsp of starch water from boiling your udon.
Step 13
Mix well until the sauce emulsifies and is creamy.
Step 14
Add back in the bacon and toss.
Step 15
Garnish with green onions.
