Step 1
Melt butter over medium heat, add onion, celery, carrot and salt and saute until transluscent. Add flour and cook 1-2 minutes. Gradually whisk in milk, heavy cream and buillion and bring to a slow boil.
Simmer until sauce begins to thicken, then add chicken, peas and thyme.
Put pie crust over top and bake at 400 degrees for 30-35 minutes.
