Veggie Taco Fries

Chilli cheese fires were on my mind the other day but we had chilli the night before so, I improvised and made Taco fries instead! Super quick and easy to make! I made my "veggie meat" in the instant pot and fries in the ninja foodie grill but you can easily use the stove top oven to cook these (this recipe is written for cooking on the stove top and in the oven)

For the Taco "meat"
2 tablespoonvegetable oil
12 ozmeatless crumbles
smart grounds
⅔ cupwater
1 packettaco seasoning
hot or mild, brand or ole el paso
For the Toppings
Instructions
For the Taco "meat"
Step 1
Pre-heat oil on a sauce pan
Step 2
Add the meatless crumbles to the sauce pan and cook according to the package instructions (roughly 10-15 minutes max)
Step 3
In a small bowl, whisk together the taco seasoning from the packet and water. Once thoroughly whisked, pour the mixture in the sauce pan with the meatless crumbles
For the Fries
Step 4
Pre-heat oven and cook fries according to the package instructions.
For the Toppings
Step 5
While the fries and meatless crumbles are cooking chop the veggies--onions, tomatoes, Jalapeños and avocados (be careful not to smash them). Toss the chopped veggies together and set aside in a bowl.
Step 6
Cut the lime in half and squeeze the juice on the chopped veggies and toss the veggies.
For the Assembly
Step 7
Add fries to a plate and sprinkle the desired amount of shredded cheese (be generous 😉) and melt the cheese in the microwave for 10-15 seconds

Add the veggie toppings to the fries and melted cheese
Step 9
Add the taco "meat" on top of the veggie toppings
Step 10
Top with Salsa and garnish with cilantro (optional)

21+ ENJOY with a big glass of Margarita of any flavor! Under 21, get a cup of refreshing lemonade with ice and ENJOY!
