Step 1
Add the carrots, celery, onion, garlic and herbs to the cooking bowl then place the skinless chicken thighs on top of the vegetables. Pour over the hot chicken stock, season with salt and pepper and add the lid to the cooking bowl. Cook on Low for 8-10 hours or High for 4-5. back to the broth, stir well and sprinkle over the parsley.
Serve in bowls with crusty bread on the side.
