Instructions

Step 1
1. Preheat oven to 180 degrees 2. Drain chickpeas and place on a lined baking tray. 3. Combine chickpeas with half of the olive oil, garlic and rosemary and bake in the oven for 25 minutes or until crispy 4. Cook quinoa in 250ml water until water is absorbed 5. Combine spinach, tomato, feta and quinoa in a large bowl and coat with the other half of the olive oil and lemon juice 6. Divide chickpeas and salad in two serves
