Cumin and Lime Black Bean Relish

The lime adds a bright, fresh note. I serve it as a relish, but you could omit the corn and process it as a dip instead if you prefer.
If you like, you can also serve this on top of greens for a salad. Have an extra lime to give each serving a wedge of juice just before eating. No other dressing needed.

Instructions
Step 1
Drain and rinse beans. Place in a medium bowl.
Step 2
If using green onion, just slice and add to the bowl. If using white onion, chop finely, then sauté for 3 min.
Step 3
If serving right away, cook corn for one minute in microwave. If prepping for later, put the frozen corn into the bowl (it will thaw in 2-3 hours)
Step 4
Using a microplane, zest the lime right over the bowl, then juice the lime. The zest will punch up the lime flavor.
Step 5
Add cumin, salt, and pepper to taste. Stir.
Step 6
If serving right away, chop some fresh cilantro for garnish. If prepping for later, cover bowl with plastic wrap and chill to let the flavors marinate together, then remove from fridge 30 min before serving, then garnish.
