Ingredients

¼ cupsalted butter
1yellow onion
medium, diced
8 ozcremini mushrooms sliced
¾ tspsalt
¼ cupall-purpose flour
2 cupsmilk
1 cupchicken broth
8 ozpasta shells
medium, uncooked
6.7 oztuna in olive oil
jar, drained and flaked
2 Tfresh leaf flat parsley
chopped
¼ tspblack pepper
1 cupsharp white cheddar cheese shredded
1 ½ cuppotato chips
Instructions
Step 1
1. Preheat the oven to 375 degrees. Grease a 2 qt baking dish with butter
Step 2
2. Melt 1/4 cup butter in a large skillet over medium heat. Add the onion, cook, stirring occasionally until slightly softened. Increase the heat to medium high and add the mushrooms and salt, stirring occasionally until the mushrooms are golden brown. (8 to 10 min) Srpinkle with flour and stir constantly until the flour has been absorbed. Reduce heat to medium and gradually add the milk, stirring constantly. Add the chicken broth. Bring the mixture to a simmer and cook until thickened, remember to stir this mixture constantly because it will burn at the bottom if you don't.

3. Cook the pasta in salty water according to the package instructions. Drain the pasta and return to the sauce pan. Add the mushroom mixture, tuna, and parsley. Stir gently to combine. Sprinle with pepper and remaining salt.

4. Transfer the pasta mixture to the prepared baking dish. Sprinkle with the cheese and crumbled potato chips. Bake until the top is golden brown and the edges are bubble, about 25 minutes. Let stand 5 minutes before serving.
