Ingredients

5 lbsred skin potatoes
small cubes
16 ozbacon
15 ozmayonnaise
1 ½ cupshredded cheddar cheese
from block
1red onion
large, diced
1 cupsour cream
1 ½ teaspoongarlic powder
½ teaspooncayenne pepper
2 tablespoonsworcestershire
2 tablespoonsdried parsley flakes
sea salt
to taste
black pepper
to taste
6 cupswater
4 cupschicken broth
Instructions
Step 1
Cube potatoes into small bite size pieces and wash off
Step 2
Bring large pot of salted water and chicken broth to a full boil. Add potatoes and cook 8-10 minutes (very slightly firm to the bite)
Step 3
Mix mayonnaise, sour cream, seasonings, in a large bowl
Step 4
Cook bacon and cook in skillet over medium heat until crispy. Remove from grease with slotted spoon and place on paper towel
Step 5
Wait until potatoes and bacon are room temperature and mix together with mayonnaise mixture
Step 6
Add onions and cheese and mix thoroughly
Step 7
Refrigerate for 8-24 hours
