Step 1
Season and dry the beef, before adding to a hot pan to sear it. Add beef to slow cooker set to high.
Step 2
Dice the chorizo into spears and fry to release oil. Add onion, carrot and celery, diced to 5-10mm pieces.
Step 3
Add crushed garlic clove and sliced chillies, cooking for 1-2 mins. Deglaze pan with red wine, and add to slow cooker.
Step 4
Add tin of tomatoes to slow cooker and leave for 4-5 hours. Check liquid after 3 hours and add wine if necessary. It’s ready when the beef breaks easily.
