Mix all lentils together and wash them thoroughly. Soak in water for 5-6 hours.

channa dal¼ cup
moong dal¼ cup

After soaking, drain excess water, and grind with some quantity of water to a coarse batter.

In the same mixie, now add salt, hing, curry leaves, corriander, dried red chillies, and pepper.

Step 5
Grind to a coarse batter. This can be stored in the fridge for upto a week in an airtight container.
Step 6
Heat a pan and spread some oil on it with a paper tissue.
Step 7
Pour a ladle of the adai batter onto the pan and spread it evenly in a circular shape.
Step 8
Add a few drops of oil to the edges so it doesn't stick to the pan.
Step 9
Flip the adai over to the other side and add few drops of oil on this side too.
Step 10
Serve hot with chutney, pickle, gunpowder, or yogurt.
