Instructions

Step 1
Wash about 8-10 okras and pat each of them dry with a paper towel. This is important since okra tends to get slimy if not dried properly.
Step 2
In a bowl, mix together 4 tbsp coriander powder, 4 tsp cumin powder, 2 tsp of dried mango powder, 2 tsp red chili powder, 1/2 tsp turmeric powder, 1 tsp garam masala and 2 tsp salt. The stuffing is ready.
Step 3
Now slit open each okra vertically making sure it doesn’t cut through and fill each with a generous amount of the stuffing. Set aside.
Step 4
In a thick, flat bottomed pan, heat 2 tbsp of oil. Once hot, gently add each stuffed okra in a single layer.
Step 5
Reduce heat to medium-low, cover and cook for 2 mins. Gently flip each over over and cover and cook for another 2 mins.
Step 6
Repeat this process after every 2-3 mins until the okra is tender and done. This might take about 15 mins on low heat.
Step 7
Once ready, serve the bhindi hot along with roti or paranthas!
