Urad Daal with Aubergine

Commonly known as urad daal, but many may also call it white lentils. Most daals are watery, but this is usually cooked dry. It goes well with salad and raita and is usually consumed with roti or naan.

Instructions
Step 1
Put the urad daal in a pot to boil in 700 ml water for 40 minutes.
Step 2
Simultaneously in a separate pan, heat the vegetable oil on a medium heat and saute the onions until they soften and change colour.
Step 3
Add the tomato, ginger and garlic paste with all the spices except the garam masala.
Step 4
Add 100 ml of water and cook for a few minutes until it turns into a paste.
Step 5
Add the paste to the urad daal and cook for a few minutes on a medium heat.
Step 6
Add the aubergine and garam masala . Cover and cook on a low heat for 15 minutes.
Step 7
Garnish with green chillies and coriander.
