Step 1
In a large pot, sauté leeks and garlic in olive oil over medium heat until leaks soften. Add mushrooms, Thyme, salt, and pepper stirring constantly 2-3 minutes.
Step 2
Add butter and melt over medium heat; add flour, stirring constantly for 2 to 3 minutes or until incorporated.
Step 3
Gradually add broth (vegetable or chicken) and Lager, stir until blended; bring to a gentle boil over medium heat.
Step 4
Reduce to a simmer for 10 to 15 minutes or until soup is thickened.
Step 5
Stir in cream, lower heat slightly, and gradually add Gruyere and Parmesan cheese, stirring continuously, until melted. Finish with salt & pepper to taste.
