Homemade Doner Kebab

Instructions

Step 1
Juice your lemon into a food processor and add the onion garlic salt herbs and spices and blitz to a smooth paste.
Step 2
Remove half the mix from the processor (or more if you have small one
Step 3
Chop up your bacon and add half in along with half of the lamb and beef mince
Step 4
Let your food processor run for 2-3 minutes until you have a paler smooth meat paste, then tip out and repeat for the rest of the spices and meat, thoroughly mixing it all together at the end
Step 5
Lay some tin foil down and your meat on top and roll it up into a log about 10 inches long
Step 6
Wrap this in cling film and set in the fridge overnight
Step 7
Heat the oven to 180C and remove the cling film from the meat but leave the foil on
Step 8
Bake for 60-70 minutes, or until it reaches an internal temp of 60C
Step 9
Reserve the fat juices for later - lots of flavour
Step 10
Now either attach the meat log to a rotisserie, basing with the meat juices between sessions of carving off the outer layers, or add the log to a frying pan, fry each side til brown before carving into thin strips

Load up onto a doner kebab or inside a doner Wellington!
