Instructions

- Pre heat oven to 425°F. Wash and dry all produce.
Step 3
- Separate whites and greens of scallions.
Step 4
- Thinly slice greens, mince white.
Step 5
- Peel and mince ginger

RICE

- Wash the rice until the water runs clear

- Combine rice, water, and big pinch of salt in small pot.
Step 9
- Bring to boil, then cover and reduce to simmer. Cook until rice is tender, 15 to 18 minutes.

SAUCE

- Combine mayonnaise, sour cream, honey, soy sauce, and Sriracha in bowl with whisk. Set aside.

MEATBALLS

Combine beef, panko, scallion whites, ginger, soy sauce, 1/2 tsp salt, 1 tsp pepper in large bowls. Mix until all ingredients are well dispersed in the meat.
Step 14
Form into 1 1/2 inch meatballs. 4 serving portion should make 20 to 24 meatballs.
Step 15
- Place on lightly oiled baking sheet. Bake at 425°F until internal temperature reaches 160°F, about 14 to 16 minutes. (Bake at the same time as green beans in following step)

GREEN BEANS

- Toss green beans in olive oil, salt, pepper. Bake along with the meatballs.
Step 18
Serve the meatballs over rice topped with sauce and scallion greens. Serve with green beans on the side or mixed in together.
