Ingredients
4 servings

2chicken breasts
sliced into 1 inch pieces

2 tablespoonolive oil

1 tspHerb de Provence
or any dried spice, oregano is a good substitute

1 packageBella Mushrooms
sliced, washed

1 jarsundried tomatoes

1onion
small, chopped

½ teaspoonsalt

1 cupparmesan
freshly grated

¼ cupwhite wine

1 cupheavy cream

1 lbPenne pasta
or any pasta you have
Instructions
Step 1
Boil water and cook the pasta, al dente is best (reserve ½ cup pasta water
Step 2
just in case you need it for the sauce)
Step 3
Heat olive oil in deep pan
Step 4
Sprinkle salt, pepper and the dried herb all over the chicken slices
Step 5
Saute the chicken until cooked and the edges begin to brown
Step 6
Remove the chicken from the pan and set aside
Step 7
Add the sundried tomatoes and the oil that they were in to the pan
Step 8
Add the onions and sauté until they are almost transparent
Step 9
Add the mushrooms and sauté for another 3-5 minutes
Step 10
Add the chicken back into the pan
Step 11
Add the wine and scrape the bits from the bottom of the pan
Step 12
Add the cream, salt and bring to a simmer (be careful not to let it boil)
Step 13
Simmer for about 3-5 minutes, until sauce is a bit thick
Step 14
Add the pasta and grated parmesan cheese (if sauce is too think, add the

pasta water)
Step 16
Garnish with fresh parsley, if you have it
