Vegan Avocado Egg Rolls

Have you ever watched the video of the little boy whose parents gifted him an avocado for Christmas? Random as it may seem, whenever we hear the word “avocado,” we can’t help but think of his giddy response, “It’s an avocado. Thaaaanks!” If you ask us (or that little boy) avocados make perfectly delicious gifts. Still, if you’re looking to really razzle-dazzle someone, consider this recipe. We’ve used our Grain Free Cassava Flour Tortillas to create a delicious and flavorful treat you can serve up as a snack, an appetizer, or however your heart desires. Sure to make people say, “It’s a Vegan Avocado Egg Roll! Thaaaanks!” Or something like that.

Instructions

Step 1
Combine avocado, sun-dried tomatoes, onions, scallions, cilantro in a large bowl. Season with salt and pepper to taste.
Step 2
Preheat a comal or skillet over medium heat. Heat each tortilla for 10-15 seconds on each side until soft and pliable.
Step 3
Fill the center of a tortilla with about ½ cup of avocado filling and roll like a burrito. Repeat with remaining tortillas. Secure each “egg roll” with toothpicks to avoid opening in the oil.
Step 4
Preheat frying oil to 350F. Deep fry each roll for 2-4 minutes or until crispy. Drain on paper towels.
Step 5
Cut each egg roll on a bias and serve with hot sauce for dipping.
