Homemade Thai Chili Paste

Rule of thumb is 1 teaspoon of salt and 1 tablespoon of olive oil for every 200 grams of chilies.
However, you can play with the seasoning to suit your taste :)

Instructions
Step 1
Wash and remove the stems of the chilis
Step 2
Add salt to your mortar and pestle
Step 3
Add the chilies and make into a paste (*texture to your liking, the smoother the better for adding on bread for sandwiches)
Step 4
Add olive oil and give it another mix for a minute or so
Step 5
Add mixture into a jar and store in the fridge for up to 3 months
