Ingredients

2 poundsboneless skinless chicken breasts
fat trimmed
4tomatoes
medium-sized, cored, seeds and juice removed, and diced, You can sub 28oz can diced tomatoes - undrained - if fresh tomatoes aren’t in season
6 ozcan tomato paste
2 ozfresh baby spinach
1 cupyellow onion
small, diced
1 tablespoonItalian seasonings
1 teaspoonbasil
1 teaspoongarlic powder
½ teaspoonsalt
¼ teaspoonpepper
¼ teaspooncrushed red pepper flakes
mozzarella cheese
parmesan cheese
Instructions
Step 1
Chop onions, tomatoes, and spinach.
Step 2
Add all to crockpot and cook on “low” setting for 6-8 hours or until chicken is cooked through and tender.
Step 3
Shred chicken breasts or serve whole.
Step 4
Top with shredded mozzarella and parmesan cheeses.
