12 ounceswagon wheel pasta
uncooked
½ cupwhole-wheat breadcrumbs
fresh
¼ cup1% low-fat milk
1.25 pounds97% lean ground turkey
1 tablespoonfresh parsley
chopped
1 tablespoonfresh basil
chopped
2 tablespoonsolive oil
divided
½ teaspoondried oregano
½ teaspoonground fennel seed
crushed
½ teaspoonkosher salt
¼ teaspoonblack pepper
freshly ground
2garlic cloves
minced
½ cupwater
1 x 25.5 ouncepasta sauce
½ cupfresh Parmesan cheese
finely grated
Instructions
Step 1
Prepare pasta according to package directions, omitting salt and fat.
Step 2
Drain and place in a large bowl; keep warm.
Step 3
While pasta cooks, combine breadcrumbs and milk.
Step 4
Let stand 5 minutes, squeeze out excess milk, and place in a large bowl.
Step 5
Add turkey, parsley, basil, 1 tablespoon oil, and next 5 ingredients (through garlic).
Step 6
Gently shape meat mixture into 48 (1-inch) balls (do not pack)
Step 7
Heat a large nonstick skillet over medium heat.
Step 8
Add remaining 1 tablespoon oil; swirl to coat.
Step 9
Add half of meatballs to pan.
Step 10
Cook 1 to 2 minutes on each side or until browned.
Step 11
Remove from pan; keep warm.
Step 12
Repeat procedure with remaining meatballs.
Step 13
Return all meatballs to pan.
Step 14
Stir in 1/2 cup water, scraping pan to loosen browned bits.
Step 15
Stir in pasta sauce; cook, uncovered, over medium-high heat for an additional 3 minutes.
Step 16
Pour over pasta, tossing to coat.
Step 17
Sprinkle with cheese.
