Instructions
Step 1
Preheat the oven to 180 degrees. Put the rice on to cook to ensure you have time to let it sit in its own steam before serving.
Step 2
Put tofu into a bowl with 2 tbsp soy sauce and 2 tbsp corn flour. Mix until tofu coated, and place on baking tray in oven at 180 degrees for 20 minutes.
Step 3
In a bowl or jug, mix together the ginger paste, garlic, soy sauce, shiitake sauce, lemon juice and sesame oil.
Step 4
Heat the coconut oil in a wok and add in the white parts of the spring onions and saute for 2 minutes, Add in the remaining vegetables and stir together and fry.
Step 5
Once the tofu is cooked, stir into the fried vegetables and add in the sauce. Cook for 4 minutes then serve with rice. Garnish with remaining spring onion and sesame seeds.
