High Energy Cookies. Great to make in large batches and hold up for quite a while. Useful for hiking. The chocolate can be anything, but I've found it to be tastier with dark (80% or greater), as it contrasts with the sweetness better. Egg yolk count depends on egg size. 20 servings means 20 cookies.

Instructions

Step 1
Sieve together flour, baking powder, and salt.
Step 2
Stir in porridge oats, dried cranberries, brown sugar, ground almonds, and chocolate chunks.
Step 3
Stir in melted butter and egg yolk.
Step 4
Form balls and flatten onto trays with baking paper. Make sure to leave space between cookies for expansion.
Step 5
Bake in 190°C oven for 12min and then allow to cool outside.
