Instructions

Step 1
Preheat the oven to 230C
Step 2
Mix 2tbsp olive oil with juice from 1 lime
Step 3
Place the chicken in a baking tray and rub all over (inside and outside)with oil mixture.
Step 4
In a bowl combine sea salt, black pepper, turmeric and thyme. Mix good and rub your chicken from inside and outside.
Step 5
Stuff the chicken with crushed and peeled garlic cloves, halved shallot and halved lime.
Step 6
Cover with parchment and roast for 1 hour covered and 30 minutes uncovered.
Step 7
When ready baste the chicken with juice from baking tray.
Step 8
Serve with salad or rice.
