Honey Wheat Bread (for Vitamix)

I combined this recipe with the Vitamix whole wheat bread recipe and it turned out nicely.

Instructions

Step 1
To proof the yeast, combine 1/4 cup warm water, 1 tsp honey, and yeast. Stir quickly to combine. Set aside for 5-10 minutes to bloom.
Step 2
Place the flour, vital wheat gluten and salt into the Vitamix container and secure the lid. Start the blender on its lowest speed and increase speed to Variable 6. Blend until a hole forms in the center of the mixture, about 5 seconds. Turn the machine off and remove lid plug.
Step 3
Pour the remaining bread ingredients (remaining water, remaining honey, butter, salt and flour) into the hole in the flour. Secure lid plug. To mix the dough, select Variable 6. Pulse 5-6 times. Remove the lid.
Step 4
While the dough rests briefly in the container, lightly coat an 8½-inch x 4½-inch (22 cm x 11 cm) loaf pan with vegetable cooking spray.
Step 5
To knead the dough, two steps are required.
Step 6
Step 1: Use a nylon spatula to scrape the sides of the container. Pull the dough away from the container sides and into the center of the mixture.
Step 7
Step 2: Select the highest setting. Pulse blender 5-6 times.
Step 8
Repeat the above two-step process two times, or until the dough binds together in a soft, elastic mixture. To remove the dough from the container, invert the container over the prepared pan and let the dough fall into the pan. Use a wet nylon spatula to remove any remaining dough.
Step 9
Use a wet or oiled nylon spatula (or lightly floured fingers) to shape the loaf. Allow the dough to rise in a warm place, covered with plastic wrap, until it doubles in size, about an hour.
Step 10
Shape dough into a loaf by rolling the dough and tucking in the ends and place in a shortening coated bread pan. Cover with plastic wrap and rise for an additonal 30 minutes.
Step 11
Turn on the oven to 375°.

Bake at 375° for 25 - 30 mintues. Brush the top with butter during the last 5 minutes of baking if deesired.

Cool for 15 mintues before slicing.

To grind your own whole wheat flour, take 2 1/2 cups of whole kernel wheat and blend on high speed for 1 minute, using the tamper if necessary. Remove the lid and allow the flour to cool for several minutes before using. Measure out by gram weight the amount of whole wheat flour needed, as this will yield the most accurate results. 390g of wheat berries will be the same weight, but a different volume, once processed into flour. Applesauce can be used as a substitute for oil or eggs in most baking recipes. Please refer to our dry grain grinding chart for more details on grinding whole wheat flour. Be sure to knead the dough so it wil not fall.
