Coconut Chia Pudding (Unsweetened)

Love using this as part of a berry bowl with frozen mixed berries (slightly thawed), Greek yogurt (flavored or unflavored), grain-free granola, cacao nibs, and unsweetened shredded coconut.

Instructions

Step 1
Into a 1 quart container (i.e. 1 quart mason jar), add 1/2 cup chia seeds followed by hot water. Stir well to ensure that there are no chia seed clumps.
Step 2
Then add in the can of coconut milk and extracts. Stir again to mix well.
Step 3
Allow mixture to cool off and then refrigerate to chill for 4 hours so that chia seeds can rehydrate before serving.
