Ingredients

For the Marinara Sauce
2 tablespoonsolive oil
1onion
finely diced
1 tablespoongarlic
1 x 28 ozcan of crushed tomatoes
1 tablespoonbasil paste
salt
to taste
pepper
to taste
garlic powder
to taste
Ā½ cupchicken broth
Ā½ tablespoonsugar
For the Chicken Cutlets
Instructions
Step 1
1. Using a meat mallet, pound the chicken breast until thin. Season chicken with salt, pepper, and garlic powder. Set aside.
Step 2
2. In a bowl, beat two eggs. Set aside.
Step 3
3. In another bowl, add Italian breadcrumbs and set aside.
Step 4
4. Dip seasoned chicken in beaten eggs and then into the breadcrumbs.

5. In a large skillet, heat olive oil over medium heat. Fry chicken breast until golden brown.

6. Place chicken into 9x13 Pyrex and top with a bit of sauce. Add shredded mozzarella cheese and bake on 375 until the cheese has melted.

For the Marinara Sauce

In a large skillet, add olive oil and diced onions and sautƩ until softened
Step 9
Add garlic until fragrant
Step 10
Add can of crushed tomatoes, basil paste, salt, pepper and garlic powder. Add chicken broth to thin it out and sugar to cut the acidity.
Step 11
Simmer for 20-30 mins while you fry the chicken cutlets.
