Ingredients

5 cupswhole wheat bread
cubed, rustic, 1/2 inch cubes
5 tablespoonsunsalted butter
divided
4 cupsgranny Smith apples
peeled and diced
4 cupsonions chopped
2 cupscelery
chopped
1 ½ cupsham
diced
1 tablespoondried oregano
1 teaspoonground cinnamon
¼ teaspoonground nutmeg
1 ¼ cupsunsweetened applesauce
2 tablespoonsflat leaf parsley
chopped
½ teaspoonground pepper
⅛ teaspoonsalt
1 cuplow sodium chicken broth
Instructions
Step 1
1. Preheat oven to 350 degrees. Coat 9 x 13 inch baking dish with cooking spray
Step 2
2. Spread bread on a rimmed baking sheet and toast, string occasionally until dry and lightly browned, 18 to 22 minutes. Transfer to a large bowl
Step 3
3. Meanwhile, heat 1 tablespoon butter in a large skillet over medium heat. Add apples and cook, stirring occasionally until softened, about 10 minutes. Transfer to the bowl with the bread
Step 4
4. Add 2 tablespoons butter, onions, celery and ham to the pan. Increase heat to medium high and cook, stirring occasionally until just starting to brown, about 5 minutes. Reduce heat to medium low and cook, stirring occasionally until very soft, 10-15 minutes

5. At oregano, cinnamon and nutmeg. Cook, stirring occasionally until fragrant, about 1 minute. Transfer to the bowl with the bread
Step 6
6. Add applesauce, parsley, pepper and salt and mix well. Add broth and gently stir until well combined
Step 7
7. Transfer to the prepared baking dish. Cube the remaining 2 tablespoons butter and dot the top of the stuffing with it
Step 8
8. Bake until browned, 40 to 45 minutes
