Step 1
Heat oil in a rice pot. Add in your Sofrito and olives. Right here you can also add bell peppers and onions. I do that but you don’t necessarily have to. Sauté for a couple minutes and add in a can of tomato sauce. Season to your liking. Add in the green peas. Wash rice until water comes out clear. In that same rice bowl puts enough water to go to the first line of your pointer finger. Add all contents of bowl in the pot and mix to combine all the ingredients. The fire should be on medium high at this point. When all the water evaporates turn the fire all the way to low and cover. If you put enough water, then it should be done in 20 min. If it’s still a little hard, mix the rice and cover for another 20 minutes.
