Instructions
Step 1
With a knife, cut the corn from the cob onto a cutting board. Thinly slice the shallot and chop the garlic, the Birds Eye chili and the celery leaves.
Step 2
Transfer everything to a bowl. Add the dry ingredients: flour, sugar and salt, and mix.
Step 3
Follow that with the wet: coconut milk and egg, and mix until a sticky mixture is formed.
Step 4
In a frying pan, add the oil (enough until maybe ½ inch deep), and once it gets hot, add the batter with a spoon and fry for 3 ish minutes on both sides, until golden brown.
Step 5
Serve with a sambal or sauce of your choice!
