Prepare and mix mung bean powder and all purpose flour together with water. Whisk until it becomes smooth. Chop scallion and cilantro, transfer into a small bowl.

To make the sauce, simply mix fermented tofu bean cube, garlic chili sauce with sweet bean paste, add in water to dilute well.

Heat up cooking oil in a big pot to the right temperature at 375 °F or use a wooden chopstick to test the oil temperature, if chopstick bubbles, oil is ready to go. Gently throw in wonton wrapper in hot oil to fry on medium heat, remove from oil once it turns golden brown and crispy. Set aside.

Heat up a skillet or flat pan on low heat, brush a small amount of cooking oil, scoop in a small amount of mung bean batter to cook. Quickly use a crepe spreader to flatten out the batter as it will soon form into an even pancake/crepe. Crack an egg on top of the crepe, use crepe spreader to even out egg application. Sprinkle chopped scallion and cilantro on top.
