Instructions

Step 1
Cut chicken into 2-2.5 inch strips
Step 2
Combine garlic, ginger sugar and salt in food processor. Blend into a coarse paste.
Step 3
Add fish sauce and coconut. Continue blending.
Step 4
Place chicken in mixing bowl, add marinade, cover and refrigerate 1-2 hours.
Step 5
After marinating the chicken, thread the pieces on to skewers.
Step 6
Setup charcoal grill for direct grilling. Create a very hot grill. Grease grill with vegetable oil.
Step 7
Place chicken skewers directly over coals. Turn after 2 or 3 minutes per side. Grill until chicken is lightly browned.
Step 8
Serve immediately.
