Step 1
Preheat oven to 180C

Place the chicken thighs in a bowl, add the spices and toss

Season generously with ground black pepper

Heat the oil in a large non-stick frying pan

Add the chicken and fry for 4-5 minutes until browned on all sides

Add the onions, garlic and sweet potatoes and cook for 3-4 minutes gently stirring regularly

Add the tomatoes, the mint, coriander, stock powder, lemon peel and sultanas

Bring to the boil

Transfer to a ridded oven-proof dish

Bake in the oven for 1 hour

Serve with rice or fruity couscous and green beans or a salad
