1red pepper
deseeded and diced
1yellow pepper
deseeded and diced
1red onion
diced

For the Moroccan Spice Mix
Instructions
Step 1
Mix all of the spice mix ingredients together and set aside.
Bowl
Step 2
Preheat the oven to 200°C (390°F), fan 180°C (355°F), gas mark 6.
OvenPreheat
Step 3
Place the peppers and onions on a baking tray. Spay with some cooking spray and season with salt and pepper.
Baking sheet
Step 4
Coat the top of each chicken breast fillet with the spice mix and place the fillets on top of the veg on the baking tray (you can keep any remaining spice in an airtight container for another time.)
Step 5
Cut the lemon in half lengthways and cut one half into eight slices. Arrange two slices on each piece of chicken and season with a little salt. Squeeze the remaining lemon half over the chicken.

Place in the oven and cook for 20 minutes, or until the chicken is cooked through.

Step 7
Remove from the oven and serve the spiced chicken fillets with the roasted vegetables.
