Instructions
Step 1
Cut and salt the eggplants for at least 30 min.
Step 2
Preheat oven to 200 degrees Celcius.

Step 3
Wash the salt off the eggplants and then mix the lamb and eggplant with the spices in a deep oven-proof container. Mix until everything's pretty evenly coated.
Step 4
Cover with aluminium foil. Put in oven for about 3-4 hours at 200 degrees.
Step 5
Stir at 30min intervals after the first hour. Make sure that the eggplants are rotated so they dont stay at the top of the dish and dry out.
