Black bean and beetroot burgers

Instructions
Step 1
Preheat the oven to gas 6 or 200C.
Step 2
Use the oil to lightly grease a baking sheet.
Step 3
Place the chopped beetroot and onion in a food processor and pulse until roughly chopped, then add the black beans and pulse again until the mixture is sticky and well combined. But still a bit lumpy.
Step 4
Transfer the mixture to a large bowl and add the eggs, breadcrumbs, spices, salt and thyme and mix well with a spatula.
Step 5
Roll the mixture into 8 patties (burgers) about 1.5 cm thick. Place the patties on the baking tray and brush with oil.
Step 6
Place the tray of burgers in the oven for 15 minutes then take them out and turn the burgers over and bake for a further 5 minutes.
Step 7
Serve the burgers on rolls with relish, salad and pickles.
