Instructions
Step 1
Roast red pepper at 425 F for 20 minutes.
Step 2
Allow red pepper to cool before adding to food processor with remaining mayo ingredients. Set aside.
Step 3
Add all the chickpeas and 1/2 cup of the spicy mayo to food processor, pulse for about 20-30 seconds. You don't want to over blend otherwise it will come out mushy, you still want texture and body so it's "chunky."
Step 4
Mix in the fennel and red onions to your "tuna." Make any seasoning adjustments here.
Step 5
Assemble your sandwich and enjoy!
