Salmon Patties with Salad Greens

Ingredients

2 x 6 ozsalmon
can, wild caught
2Zucchini
medium, courgette
1leek
medium
1 Tbspalmond flour
1clove of garlic
1 Tbspcoconut oil
salt
1 tspfresh dill
or dried
1 Tbspnlemon juice
from fresh lemon

Instructions
Step 1
Preheat the oven to 200°C/400°F.
Step 2
Chop the zuchinni/courgette, and leek and add along with garlic (if using), coconut flour, dill and salt to a food processor and set to chop.
Step 3
Drain the canned salmon and add to the food processor with coconut oil and blend.
Step 4
Form into small cakes, using a cheesecloth (or paper towel) to remove excess liquid.
Step 5
Place on a greased cooking sheet lined with parchment paper and cook for 35-40 minutes, very carefully and gently flipping them halfway through.
Step 6
Finish them in a frying pan if they need extra crisping. *Be very careful with them. They can be easily broken as they don’t contain eggs. If you are okay with eggs, feel free to add 2 into the mixture.
Step 7
Serve 2-3 patties with broccoli, green beans or asparagus or rocket plain salad.
