Instructions

Step 1
First, we need to cut the end off the eggplant and slice your eggplant into long, thin “steaks.” If you love eggplant, go crazy! If you’re unsure, I would suggest that you cut them into less than 1 inch slices, let’s say 1/2 inch. Now, you want to grab a baking tray and put a wire rack on top of it. Thoroughly salt each side of your eggplant and lay it on the wired rack. Then, go play with your kids or pet your dog and come back in a half hour. Oh, and preheat that oven to 400 degrees.
Step 2
Now that your eggplant has gotten rid of some of it’s moisture that may make it taste bitter, run each piece of eggplant under cool water and pat both sides dry with a paper towel. Mix up some olive oil with salt and pepper to taste (sometimes I throw some garlic powder in there too) and brush it over both sides of the eggplant pieces and place them on the baking tray. I usually throw the garlic in to roast at the same time as the eggplant…so peel the papery wrapper on your garlic head, and cut the top off the garlic. Make sure all garlic pieces are exposed and douse it with olive oil. Wrap the head of garlic in aluminum foil and throw the garlic and eggplant in the oven. The garlic will roast for about 45 minutes. Let the eggplant roast, flipping it after 20 minutes. Then let it continue to roast for another 15-20 minutes.
Step 3
Now, is a great time to cut all the veggies you’ll want for your sandwich. Since the bread is relatively small, I like to use a vegetable peeler to get thin slices of carrots and cucumber.
Step 4
In the last 6 or so minutes of the eggplant and garlic baking, you can add in your ciabatta bread. Make sure you sprinkle it with water first (it’s half baked bread) and then let it bake for 6-8 minutes. After everything is done in the oven, take it all out and you can start assembling your sandwich!
