SPINACH AND BEEF STEW (SABANEGH W-RIZ).

This is an authentic Lebanese Spinach stew, made with simple ingredients, spiced ground beef, fresh or frozen spinach, and a squeeze of lemon juice. It’s hearty and filling, loaded with nutrient-rich spinach.

Instructions

Step 1
Toast the pine nuts in a dry non stick pan for around 5 minutes until golden, set aside.
Step 2
In a large pot, with 1 tbsp of olive oil, sauté the onion for 5 to 6 minutes until wilted, add the garlic and sauté for another minute until fragrant. Then add the minced beef with 1 tbsp oil, 1/2 tbsp allspice, 1/2 tbsp salt and continuously stir over medium high heat for about 5-10 minutes until the beef cooked.
Step 3
Drop the spinach and cook with the mixture for 3 minutes, season with salt and allspice then add the boiling water and let it soften in the juices, lower the heat, let it simmer for about 15 to 20 minutes.
Step 4
Before turning off the heat, add the lemon juice and taste to adjust the seasoning if required.
Step 5
Serve with vermicelli rice, extra lemon slices and top with toasted pine nuts.
