"Sbenekh W’ Riz” It is a simple Lebanese dish usually made as a stew with ground beef and lemon sauce, but, this meatless pilaf version made with fresh spinach and rice cooked with aromatic herbs. It's an easy and healthy one pot meal.

Instructions

Step 1
In a cooking pot, heat 5 tablespoons extra virgin olive oil over moderate heat, add the onion and cook for 2 minutes, add the spring onion and garlic, sauté until softened and translucent.
Step 2
Add the spinach in, in batches, season with some kosher salt and cook until wilted, add 5 tablespoons of extra virgin olive oil and add the rice, cook for 2 minutes more stirring with a wooden spoon.
Step 3
Pour in 3 cups hot water or stock and bring to a simmer, cook covered over medium-low heat for 15 to 20 minutes or until rice is cooked. (check at 10 minutes, then every 5 minutes until liquid is absorbed).
Step 4
Stir in the lemon juice, lemon zest, oregano, and remaining olive oil, taste for additional salt, cook for a minute more, and remove from the heat.
Step 5
Serve with freshly ground pepper and some extra lemon squeezed on top.
