GLUTEN FREE SPINACH PIES

This is a traditional Lebanese spinach fatayer recipe that’s light, tasty and its healthy since this recipe is entirely Vegan & Gluten-free.
It’s perfect as Mezze light snack or/ and appetizer.

300gwhite rice flour
1 cuptapioca flour
1 cuppotato starch
2 Tbspbaking powder
4 tsppsyllium husk powder
2 tspsalt
½ cupYogurt
¼ cupOlive oil
1 pinchSalt
1 tspSugar
1 cupwater

Step 1
In a Bowel, add the Flour Mixture, sugar, salt and olive oil and mix well until the ingredients stick, then add the yogurt and continue mixing.

Add sugar to the water, then add it to the flour and knead the dough until it all comes together. There should be nothing sticking to the bowl. (If you feel like the dough is sticky, then add one tablespoon of the flour mixture at a time until it comes together. If you feel like the dough is too dry and not coming together, add a tablespoon of water).
Step 3
Remove the dough from the Bowel and form a bowel using excess flour. Place the dough back in the ball let the it rest for 15 minutes in a warm place. and cover with a clean kitchen towel.

Chop the spinach, then put it in a saucepan over a low heat for 15 minutes.

Then add the chopped onion, olive oil, lemon juice, salt, pepper, sumac & pine nuts then mix for a minute and set aside to cool.
Step 6
Preheat the oven to 220C and place oven rack in the middle. Prepare baking sheets with parchment paper.

Divide the dough into 2 inch balls using excess flour. You should get about 30 to 40 pies. Cover with kitchen towel for another 15 min.

Roll out the dough to a 5-inch circle. Place about 2 tablespoons of filling in the middle. Bring 2 sides together and pinch to close. Bring the third side up so it looks like a triangle and pinch to close well. Place on baking sheet.

Put the tray in the oven on a medium heat for 10 to 15 minutes, (check on them at the 10 minutes mark) or until they become golden brown.
