Instructions

Step 1
Heat a frying pan over a medium-high heat and add the olive oil, season the zucchini and shallow fry for 2 minutes on each side or until golden color, then set aside.
Step 2
In a large skillet heat 3 tbsp olive oil over medium high, sauté the onion until wilted, stir in the garlic until beginning to brown and fragrant, about 1 minute.
Step 3
Add spinach to the skillet in batches, waiting for one batch to wilt before adding the next. Cook until tender.
Step 4
In a separate small bowl, mix the lime juice, 1 tbsp olive oil, chili flakes, pomegranate molasses and pour it onto the spinach then return the zucchini pieces to the skillet and gently mix.
Step 5
Cook for a 1 to 2 minutes, season, sprinkle over the pomegranate seeds, add a few more dried chili flakes and a drizzle of olive oil.
