This wonderful dinner is packed with flavor, make it as mild or as spicy as you prefer. I love having leftovers for breakfast with a fried egg.

Instructions

Step 1
Chop celery. onion and red pepper, set aside.
Step 2
dice chicken and season with 1 TB of cajun seasoning. set aside.
Step 3
Slice sausage and season with 1 TB Cajun seasoning, set aside.
Step 4
In a large skillet pan cook chicken with 2 Tbs of avocado oil, when cooked through, remove from skillet. brown the sliced sausage then remove and set aside.
Step 5
Add onion, red pepper and celery to skillet and cook until softened. use more of the remaining avocado oil only if needed. add minced garlic and chicken broth. add tomato paste and bring to a simmer. season with worchestershire sauce, gumbo file, crushed red pepper and hot sauce (if using). add frozen riced cauliflower and stir until separated and well combined.
Step 6
Add cooked chicken and sausages back to the skillet and continue to simmer as liquid is reduced to your liking.
