Ingredients

For the sweet potatoes:

1.5 poundssweet potatoes
cut into half moons

1 Tbsparrowroot
or cornstarch

2 Tbspolive oil

1 Tbspcumin

1 Tbsporegano

1 ½ tspchili powder

1 ½ tsppaprika

½ tspsalt
For the whipped goat cheese:

6 ouncessoft goat cheese

6 TbspGreek yogurt
thick, or sour cream, I used a mix

fresh lemon juice

1 Tbspolive oil

1clove garlic
smashed

1 Tbsphoney
For the toppings:

Step 1
Preheat the oven to 425.
Step 2
Add the potatoes to a large bowl with the starch and toss to coat. Add the oil and spices and toss again until well coated. Place the potatoes on a baking sheet and bake for 30-35 minutes, flipping halfway.
Step 3
While the potatoes are roasting, make the whipped goat cheese. Add the goat cheese, yogurt, lemon juice, oil and garlic to a food processor and process for about 30 secs until well combined and smooth (careful to not over mix). Add the honey and gently fold it into the mixture.
Step 4
Spread the goat cheese in one layer on a plate or a shallow pasta bowl. Top the cheese with the potatoes, almonds, basil, honey and black pepper.
