Ingredient Prep:
Step 1
Chop 8 cloves of garlic in food processor
Step 2
Chop 4 medium onions in food processor
Step 3
In food processor, add canned tomatoes and process until no large chunks remain.
Meatball Prep:
Step 4
In chilled bowl: Combine ground veal and pork with eggs, 3 cloves chopped garlic, generous tablespoon of parsley, and parmesan cheese. Ensure adequately combined.
Step 5
To this mixture, add salt and pepper to taste and breadcrumbs. Combine well.
Step 6
Loosely form into oval meatballs slightly larger than a ping-pong ball. Rest in refrigerator for 30 minutes.
Cooking:
Step 7
Heat olive oil in large pan on low heat. Once hot, add chopped onions. Sautee until transparent. DO NOT BROWN.
Step 8
Remove onions with slotted spoon.
Step 9
Fry chilled meatballs in olive oil until outside well browned but not cooked through. Remove meatballs.
Step 10
Deglaze pan with white or red wine.
Step 11
In large pot combine: tomato paste, 4 cans (use tomato paste can) of water, and processed tomatoes. Heat on low until bubbles, then lower to simmer.
Step 12
Add onions, sweet basil, sugar, half the chopped garlic, cooked salt and pepper to taste, return to simmer.
Step 13
Once simmering, add cooked meatballs and simmer for 2 hours.
