Creamy crockpot potato soup

Creamy and indulgent, the best comfort soup for any day! You can use any potato you like , peel them or leave the skins on, it’s up to you.

Ingredients
10 servings

2 lbspotatoes
chopped, peeled or unpeeled, russet or yellow potatoes

3 cupschicken broth

1 x 10.75 ozcan cream of chicken soup

2bay leaves

1 Tbsppaprika

½ Tbspblack pepper

½ Tbspsalt

1 Tbspdried parsley

3cloves garlic

1onion
chopped

1 packetdry ranch seasoning mix

8 ozcream cheese
diced to melt faster

1 cupshredded cheddar cheese
½ cupsoup cream

8 slicesbacon
cooked and crumbled

¼ cupheavy cream
Instructions
Step 1
Spray or line your crockpot
Step 2
Add the potatoes, bay leaves and onions.
Step 3
In a separate bowl mix together the cream of chicken soup, seasonings and chicken stock. Pour that mixture over the potatoes.
Step 4
Cook on low 5 hours
Step 5
After 5 hours add in the diced cream cheese and 1 cup cheddar cheese. Stir and cook 1 more hour. Add in the cream and remove the bay leaves.
Step 6
With an immersion blender (or in a regular blender) mix until smooth and creamy.
Step 7
Add more Salt and pepper to taste. Mix in the bacon.
Step 8
Ladle into bowls and top with your favorites , like extra sour cream, cheddar cheese, sliced green onions, or chopped bacon
