Step 1
Select Browning/Saute to preheat the pressure cooking pot. When hot, add the vegetable oil, carrots, zucchini, and broccoli. Sauté the vegetables for about 5 minutes until crisp-tender. Transfer to a plate and cover to keep warm.
Step 2
Combine the teriyaki sauce and water in the pressure cooking pot. Add the pork tenderloin. Lock the lid in place. Select High Pressure and 5 minutes cook time.
Step 3
When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 5 minutes and finish with a quick pressure release. When the valve drops, carefully remove the lid. Transfer the tenderloin to a work surface and cut it into bite-size pieces.
Step 4
In a small dish, whisk the cornstarch and cold water until smooth. Add the slurry to the pot. Select Simmer/Sauté and simmer, stirring constantly, until the sauce thickens. Stir in the diced tenderloin and sautéed vegetables. Serve in bowls over white rice or coconut rice.
