Sweet Potato Cottage Pie

Instructions

Step 1
Heat 1 tbsp of olive oil in a large, non-stick pan over a medium heat. Add the mince and brown. Once the meat has cooked, remove from the pan and set aside. Add the final tbsp of olive oil to the pan and throw in the carrots, onions and parsnips and cook for 10-15 minutes until they have softened. Add the garlic, flour, mixed herbs and cinnamon to the pan and cook for a few more minutes. Add the mince back to the pan along with the stock, red wine, tomato puree and balsamic vinegar. Mix through, reduce the heat and simmer for 35-45 minutes until the sauce has thickened and you have a nice gravy coating the mince and vegetables. While the mince is simmering, peel and chop the sweet potatoes and boil in a different pan for around 20 minutes. Drain the sweet potatoes, return to pan, add the butter and rosemary and mash them. Once the meat is cooked, spoon it into a large oven proof dish, cover with the sweet potato and place in a hot oven (200◦C)for around 30-40 minutes until it is bubbling and the sweet potato is starting to brown on top. Serve.
